Time in my kitchen is one of my favorite past-times and it has been one where there has been a lot of baking and bonding lately. Whether it’s trying a new recipe or washing dishes, it’s always therapeutic. Lately, Miss Olive must be with me at all times that I am baking or cooking. She sits on the counter, with careful attention to whatever it is that I am doing. Like many of my generation, I have a pinterest board filled with many delicious recipes. I love trying new recipes, but truth be told, about 75% of those attempts turn into pinterest fails.
Because Olive has a huge sweet tooth, like her momma, I searched for a healthy cookie recipe and found this one by Lovely Little Kitchen. My final product was not exactly a pinterest fail, but not quite a win. The cookies turned out too moist for my taste, possibly due to my substitutions. I used powdered peanut butter, rather than natural creamy or crunchy like the original recipe mentions. I also used olive oil, rather than coconut oil. (photo of my ingredients used below)
I am hoping the second time around will be a little better. Let me know if you end up trying it and what helped in making it better.
